Greek Salad.

Ingredients:
2 large ripe red tomatoes, cored and cut into 1/2 -inch pieces
1/2 red onion, cut into 1/4 -inch dice
1/2 cucumber, cut into 1/2-inch pieces
1 red bell pepper, cored and cut into 1/2-inch pieces
1/2 cup parsley, finely chopped
1/4 cup mint leaves, chopped
1/4 cup pitted kalamata olives, chopped
120g feta, crumbled (about 1/2 cup)
2 cups salted pita chips, broken into pieces
1/2 cup Greek Vinaigrette (olive oil and Lemon)
for garnish 5-6 slices of radish
Directions:
In a large bowl, combine all the ingredients and toss to coat with the vinaigrette. Serve.
