Greek Salad

Ingredients:


  • 2 large ripe red tomatoes, cored and cut into 1/2 -inch pieces

  • 1/2 red onion, cut into 1/4 -inch dice

  • 1/2 cucumber, cut into 1/2-inch pieces

  • 1 red bell pepper, cored and cut into 1/2-inch pieces

  • 1/2 cup parsley, finely chopped

  • 1/4 cup mint leaves, chopped

  • 1/4 cup pitted kalamata olives, chopped

  • 120g feta, crumbled (about 1/2 cup)

  • 2 cups salted pita chips, broken into pieces

  • 1/2 cup Greek Vinaigrette (olive oil and Lemon)

  • for garnish 5-6 slices of radish


Directions:


  1. In a large bowl, combine all the ingredients and toss to coat with the vinaigrette. Serve.
